Ingredients

The combination of flavors in these cookies is simple yet phenomenal. It has a sweet component from the sugar and vanilla and is balanced by bits of saltiness scattered around.

The pairing of coconut oil and walnuts also brings a strong nutty flavor that is irresistible!

In terms of texture, it has a crisp outer layer and is slightly chewy at the center due to the use of dark brown sugar. I always have these flavor treats with a cuppa after a heavy meal or as a light snack.

Let’s have a look at the ingredient list:

ingredient list
  • ½ cup or 102g packed dark brown sugar
  • ¼ cup or 60ml coconut oil, softened, not melted
  • 1 tsp or 5ml vanilla extract
  • ¼ tsp or 2g coarse salt
  • ¾ cup + 2 tbsp or 105g all-purpose flour
  • ½ tsp or 2g baking powder
  • 1 cup or 100g walnuts, finely chopped

Directions:

how to make walnut cookies
  1. To prepare, roughly chop walnuts and set aside.
  2. In a large bowl, combine softened coconut oil with brown sugar using a spatula or spoon. Add the vanilla extract to the sugar and oil mixture and stir until well incorporated.
  3. Add the flour, salt, and baking powder. Stir again until well combined and no lumps remain.
  4. Add the chopped walnuts and 1 to 2 tablespoons or 15 to 30ml of cold water, stirring everything until it just holds together.
step by step guide
  1. Spread the dough on a work surface and then form a 1½”/4cm square log. (You can also form a circular log but it will be harder to keep the form when cutting.) Wrap in clear plastic wrap and chill in the fridge for at least 1 hour.
  2. Preheat the oven to 325 degrees F or 160 degrees C. Line a large baking sheet with parchment or a silicon baking mat. Slice the chilled log of dough into ¼”/6mm thick cookies.
  3. Place the round cookie slices onto the baking sheet with at least ½”/16mm space between them. Bake for 18 to 20 minutes or until golden brown and barely firm to the touch.
  4. Take the cookies out of the oven and allow them to cool on the baking sheet for 5 minutes before transferring them to a cooling rack.

Tips, Variations, And Substitutions

walnut snowball cookies

🍪 Using a Mixer – If you have one you can use this to mix up the dough with medium speed. Just remember do not overmix the cookie dough or it will be too hard.

🍪 Vegan butter – you can substitute the coconut oil with this to give it a richer taste.

🍪 Powdered sugar – Sprinkle some powdered sugar on top of the cookies while they are still warm to give it an extra sweeter finish. The sugar also gives it a contrast of color.

🍪 Larger-sized cookies – You can use an ice cream scoop to portion the dough and then form them into a ball.

Then space them out evenly on the baking sheet to cook in the oven as they will spread out while baking.

🍪 Other kinds of nuts – If you do not want to add walnuts to this recipe, you can use other kinds that suit your taste like almonds, pecans, pistachios, or even peanuts.

🍪 Chocolate chips – you can add bittersweet dark chocolate chips to this recipe as well. Just fold it in with the dough before baking to give it a more cozy and richer taste.

🍪 Coffee or cocoa powder – This will give your cookies a bold aroma and a deep, darker color. It will also give it a more “mocha-like” flavor if you prefer that.

How To Store Vegan Walnut Cookies

If you want these cookies to retain their best quality then you can keep them in a cookie jar with a tight lid and just keep them on the kitchen countertop.

Or place them in an airtight container and store them in the fridge to help prolong their shelf life. This will last for about a week.

You can also make this recipe ahead of time. Just mix the cookie dough and wrap it in cling wrap. You may keep it in the freezer for about a month. Make sure the cookie dough is thawed to room temperature before baking it.

I was trying to give this five stars but something went wrong. These cookies are super delicious. They aren’t too sweet and very simple to make. My daughter suggested possibly using this as granola. I think I might give it a try. Thank you for sharing this deliciously simple recipe.
