INGREDIENTS
For 2-3 people | prepare time: 5 minutes
- 6oz/170g Dried Noodles (I use Taiwanese knife-cut noodles)
- 1 tbsp white miso paste
- 2 tbsp tahini (or Chinese sesame paste)
- 1/2 tbsp soy sauce
- 11/2 tbsp rice vinegar
- 1 tbsp minced garlic
- 1 tbsp crisp chill oil (or more) or chili garlic sauce
- sliced scallion or cilantro for garnish
Note: You can add sautéed vegetables, mushrooms, or tofu as toppings.
HOW TO MAKE SPICY MISO NOODLES
- Bring a pot of water to boil, cook the dried noodles to al dente according to package instruction.
- Meanwhile make the sauce: Add white miso paste, tahini, soy sauce, rice vinegar, and minced garlic to a bowl. Mix well.
- Add cooked noodles into the bowl.
- Mix well until all the noodles are coated with the sauce. Garnish with chopped cilantro and scallion, serve immediately.
