- 1 cup/205g dark brown sugar
- ¾ cup/180g peanut butter
- ¼ cup/60ml coconut oil, melted
- ½ cup + 2 tbsp/150ml oat milk (or other non-dairy milk)
- 1 tsp/5ml vanilla extract
- 2 tbsp/13g ground flax
- 1 ¼ cup/150g oat flour
- 1 tsp/4g baking powder
- ½ tsp/3g sea salt
- ½ cup/85g chocolate chips or chunks (optional)
HOW TO MAKE GLUTEN FREE PEANUT BUTTER BLONDIE RECIPE
1. Preheat oven to 350°F/175 C. Line an 8” x 8”/20 x 20 cm baking pan with crossing layers of baking parchment. In a measuring cup or small bowl, combine oat milk and ground flax. Set aside for 5 minutes to gel. In a large bowl combine brown sugar, peanut butter, and coconut oil. Beat using a handheld electric mixer (or stand mixer) on low until smooth. Add in vanilla extract and blend until smooth. Add the milk mixture and blend.
2. Stir in the oat flour, baking powder, and salt until well combined. Stir in the chocolate chips if using.
3. Pour into prepared baking pan and flatten into the corners.
4. Bake for 24-27 minutes until lightly browned around the edges and firm in the center. Bake longer for a more cake-like blondie and less time for something more fudge-like.Allow to cool completely before removing from pan and cutting into 2”/5cm squares.
