This king oyster mushroom recipe with cashew nuts is an easy and delicious way to enjoy these amazing mushrooms.
King oyster mushrooms are a great source of protein and have a firm, meaty texture that makes them perfect for this dish. It’s incredibly tasty and also quick and easy to make.
King Oyster Mushroom Recipe
King Oyster Mushroom stir-fry with Cashew nuts, this is a terrific combination of textures and flavors. Serve them with steamed rice and sprinkled with more cashew nuts and spring onions. It is so satisfying and delicious.
King oyster mushroom is deliciously dense in texture, and they have a very meaty and seafood liked flavor. For this recipe, they also go very well with the sauce and cashew nuts.

What are King Oyster Mushrooms?
King oyster mushroom, also known as king trumpet mushroom, French horn mushroom (Pleurotus eryngii) is an edible mushroom native to Mediterranean regions of Europe, the Middle East, and North Africa, but also grown in parts of Asia.
They are the largest species in the oyster mushroom genus, have thick, white edible stems and small brown caps.
When raw, It has little flavor or aroma. But when cooked, it has a very meaty and juicy texture, it also develops a typical mushroom umami flavor with a texture similar to that of abalone.
That’s probably why king oyster mushrooms are widely used in Vegans and Vegetarians’ recipes for meat substitutes.
Most of the time, you can find them in most Asian groceries and supermarkets (sometimes at Sunday farmer’s markets).
King Oyster MushroomS RECIPE
- King Oyster Mushrooms– all you need to do is give the mushrooms a wipe with a damp cloth or a quick rinse. It’s true that they will absorb water and the more water is absorbed the lower the flavor.
- Yellow Onion– cut into medium-sized dice.
- Tri-color Capsicum (Bell peppers)– I use red, green, and yellow capsicums for the taste and color.
- Cashew Nuts -unsalted and toasted
- Vegan Oyster sauce – I use L.K.K. all the time, they are the best in the game.
- Light Soy Sauce – same here, L.K.K.
- Chinese Cooking Wine- a.k.a. Shao-Xing rice wine for cooking, if you can’t find Chinese cooking wine, you can use Mirin or Sake.
- Toasted Sesame Oil – gives this dish a hint of nutty flavor.
- Corn Starch & Water – we add corn starch and water to the sauce, and it becomes the thickening agent (cornstarch slurry).
How to make
First, we prepare the king oyster mushrooms by cutting them into thick slices, then using the knife to score both sides of the slices.
By doing so, we created some patterns on the mushrooms, not only for the look but also for easier absorption of the sauce.
- Heat up 1 Tbsp of oil in the frying pan on medium-high heat, we are going to sear the mushrooms on both sides until light golden brown then take them out and set them aside.
- In the same pan add 1 Tbsp of oil, then saute diced brown onion till soften.
- Add diced tri-color capsicums and fry for a couple of minutes.
- Add pre-cooked king oyster mushrooms back to the pan.
- Now turn the heat to low, then add the sauce mixture into the pan, keep stirring until the sauce becomes thick.
- Finally, add roasted cashew nuts into the pan, and stir until well coated with the sauce.

Ingredients
- King Oyster Mushrooms 250g
- Yellow Onions 50g
- Red Capsicum 30g
- Green Capsicum 30g
- Yellow Capsicum 30g
- Toasted Cashew Nuts 3/4 cup
- Cooking Oil 2 Tbsp 30ml
Stir-Fry Sauce
- Light Soy Sauce 3 Tbsp
- Vegan Oyster Sauce 3 Tbsp
- Chinese Cooking Wine 1 1/2 Tbsp Note 1
- Sesame Oil 2 Tsp
- Corn Starch 1 Tbsp
- Water 6 Tbsp
Instructions
- We prepare the king oyster mushrooms by cutting them into thick slices, then using the knife to score both sides of the slices, making some patterns.

- Finally, add roasted cashew nuts into the pan, stir until well coated with the sauce.
