Ingredients for King Oyster Mushroom Stir Fry with Cashew nut
  • King Oyster Mushrooms– all you need to do is give the mushrooms a wipe with a damp cloth or a quick rinse. It’s true that they will absorb water and the more water is absorbed the lower the flavor.
  • Tri-color Capsicum (Bell peppers)– I use red, green, and yellow capsicums for the taste and color.

Ingredients of cooking sauce
  • Vegan Oyster sauce – I use L.K.K. all the time, they are the best in the game.
  • Chinese Cooking Wine- a.k.a. Shao-Xing rice wine for cooking, if you can’t find Chinese cooking wine, you can use Mirin or Sake.
  • Toasted Sesame Oil – gives this dish a hint of nutty flavor.
  • Corn Starch & Water – we add corn starch and water to the sauce, and it becomes the thickening agent (cornstarch slurry).

First, we prepare the king oyster mushrooms by cutting them into thick slices, then using the knife to score both sides of the slices.

By doing so, we created some patterns on the mushrooms, not only for the look but also for easier absorption of the sauce.
