Burger With Portobello Mushroom
Portobello mushrooms (also known as Portobella mushrooms) are large, brown round-shaped mushroom that has a texture and taste similar to steak.
They are the same species as crimini and white button mushrooms.
However, since they are from an older portion of the life cycle, they are much larger and more robust in flavor.
Vegetarian and vegan recipes often use these mushrooms in place of meat.
This versatile mushroom contributes an earthy flavor to dishes and provides a satisfyingly meaty chew that absorbs sauces and seasonings like a sponge.
Whether grilled, baked, or sautéed, portobello mushrooms make a great addition to any meal because they provide umami flavor without being too overpowering like shiitake mushrooms.
They also provide dietary fiber, Vitamin D, Potassium, and several B vitamins, and on top of all, they’re low in calories.
For this recipe, the mushrooms are marinated in olive oil, balsamic vinegar, dijon mustard, spices, and mixed herbs to give them that incredible flavor.
Serve them on your favorite buns with a fresh salad or just enjoy it as is – either way, you’re sure to love it!

Step-by-Step Making Portobello Burgers
Creating the perfect portobello mushroom burger is an art.
Follow this step-by-step guide carefully to ensure a delicious meal that will satisfy even the pickiest of eaters.
1. Rinse and dry or gently wipe off the mushrooms with a damp paper towel. Trim the stem so the mushroom cap can rest flat. With a fork, prick the top of the mushroom caps several times.
2. In a mixing cup or small bowl, mix the balsamic vinegar, 2 tbsp/30ml olive oil, mustard, oregano, coriander, salt, and pepper. Whisk together until well blended.
3. Add the mushrooms to a large ziplock bag. Pour in the marinade. Close and move everything around to completely coat the mushrooms. Place at room temperature for 20-30 minutes.
4. Slice the onion into ¼”/6mm quarter circles. Mince the garlic.
5. Heat 2 tbsp oil in a large frying pan on medium. Add the onion and garlic. Cook for 12-15 minutes, stirring regularly until golden and fragrant.
6. Line a baking sheet with foil or parchment paper. Turn the oven to broil and place the oven rack in the upper third (but not directly under the heating element). Place the mushrooms cap side up on the baking sheet.
7. Flip and cook for 5 minutes per side under the broil until barely starting to char.
8. Slice the buns. For best results drizzle a bit of olive oil and toast for a minute or two under the broiler.
Assemble the burgers:
9. Place a cooked portabella cap on the bun (or slice the mushrooms) place a small handful of arugula and 1-2 tbsp of caramelized onions on top. Cover with the top bun and serve.

For Grilling
For griddling, heat the grill pan over medium heat and brush the grates with oil before placing the mushrooms rounded side down on it.
Cook for 6-8 minutes before flipping over and cooking for another 6 minutes to get grill marks from the pan.
Add toppings such as onion slices and lettuce pieces to finish off.
For grilling in a skillet, heat up a large cast iron or non-stick skillet over medium/high heat before adding the mushrooms’ smooth side up into it.
Cook for 8-10 minutes until browned before adding vegan cheese and other toppings as desired.
Once cooked thoroughly through either method, serve warm with your favorite sides such as salad greens for an enjoyable light meal!
