How To Make Heirloom Carrots With Lemon Tahini

  1. Heat the oven to 400 degrees F/200 C, or you can opt to use an air fryer if you have one. Trim the top of the carrots, scrub clean, and pat them dry with a kitchen towel (peel them or keep the skin on).
  2. Next, line a sheet of aluminum foil with parchment paper on top and place the carrots. Drizzle them with olive oil and sprinkle with ground cumin, salt, and pepper. Toss and rub the seasoning on the carrots until they are well coated.
  3. Fold and seal the foil to make a parcel. Transfer the parcel to a baking tray. Check first if the oven is hot and put the tray inside, cook for 30 to 35 minutes or until the carrots are crispy with a little browning. Pierce them with a fork near the top if they are tender they are done. Remove from the oven.
  4. In a small mixing bowl add the lemon juice, tahini, minced garlic, and water. Sprinkle with a pinch of sea salt and mix until well combined.
