Green Beans and Potatoes (Asian style)

This potato and green beans stir fry is a great combination of carbs and vitamins. Fresh green beans can be steamed, roasted, or sauteed.

I like sauteeing green beans as I find when steaming and roasting it’s easy to overcook them.

The unique quality of this dish is that the green beans are lightly charred, when you bite into the green beans, you can taste the blistered skin and tender center in every bite…also buzzing with flavor!

  • Types of Potatoes: Peeled, diced into roughly 1×1 cm dice, leave them in the water before cooking(to get rid of starch)
  • Green Beans: If possible, choose young green beans (they tend to be juicier inside), washed and dice them into 1 cm lengths.
  • Spring Onion: washed and finely sliced.
