Green Curry Tofu

My home cooking style is always to try to simplify the number of ingredients and steps, but also no compromise to the flavors.

In this recipe, all you need is pan-frying the firm tofu then simply dump everything in one pot and let it simmer away for 30 minutes.

This curry may not look as green as you expected, that’s because we reduced the amount of the green curry paste to cut down the spiciness. If you like your curry to look green, you can add some spinach puree at the end of cooking for a greener look.

To make a good Thai Green Curry, you need a good green curry paste and the type of protein and vegetables that are suitable for the green curry. Also, season with “essential” seasonings and herbs. Essential means, non-negotiable…they are “must-haves”.

“Must-have” Ingredients for Thai Tofu Green Curry

  • Store-bought Green curry paste – I’ve tried a lot of store-bought green curry paste, the best one hands down to “Maesri.” They’re pretty good and I know most Thai restaurants use this product (kitchen confidential!). It’s inexpensive and full of flavor. You can buy this brand at most supermarkets or buy it from Amazon.
  • Coconut Sugar (or Palm sugar)– I know a lot of recipes tell you to use brown sugar or white sugar in your green curry. Please don’t! The sweetness from brown or white sugar doesn’t get along with Thai green curry (often too sweet) Trust me, you need to use coconut sugar or palm sugar to get the authentic taste of Thai.
  • Bamboo Shoots (canned)– I personally found the crunchy texture of bamboo shoots to taste so good in my green curry, although it’s not traditionally used in Thai green curry…(traditionally They use Thai eggplants).
  • Vegan Fish Sauce– Please don’t use salt or soy sauce to season your green curry…The vegan fish sauce tastes just like the ones made from salted anchovies. It gives your green curry an earthy umami flavor and delightful saltness…You can check out this article The magic ingredients in my vegan cooking.

Vegan Green Tofu Curry recipe

  • Firm Tofu (a type of bean curd)- We gonna use firm tofu as our protein. Use a paper towel to pat dry the surface of the tofu, then cut it into 2x2x0.5 inches cubes.
  • Zucchini- trim the head and the end off. Cut the zucchinis into large dice.
  • Baby Corn- baby corn is mild, faintly sweet and vegetal, snappy, and crunchy. If you can’t find fresh baby corn, you can use canned ones.
  • Bamboo Shoots- canned bamboo shoots are inexpensive and they taste so good in the green curry.

  • Maesri Thai Green Curry Paste – is traditionally made from a combination of Thai peppers, garlic, shallots, lemongrass, Thai Basil, Kaffir limes, Galangal, and spices. And I’ve checked that this product is 100% Vegan without Shrimp paste. I will post how to make “Homemade Green Curry Paste” up here soon for the people who want to make their own at home.
  • Coconut Cream (unsweetened) or coconut milk- Full-Fat coconut cream or coconut milk gives green curry rich creaminess. Lite or powdered coconut cream won’t taste as good as full-fat ones.
  • Coconut sugar or Palm Sugar– or coconut & palm sugar, as I mentioned above, don’t use brown or white sugar. We have a post to help you to find a palm sugar substitute.
  • Vegan Fish Sauce– use this instead of salt.

How to Make Green Curry With Tofu

1. Use a paper towel to pat dry the surface of the tofu, then cut it into 2x2x0.5 inches cubes. Heat up 1 tbsp cooking oil in a large skillet on medium-high heat, pan-fry tofu until both sides are golden yellow. Take them out and set them aside.

2. Grab a large heavy-bottomed casserole pot, add low-sodium vegetable broth, coconut cream, Maesri Thai Green Curry Paste, grated coconut sugar, and Vegan fish sauce into the pot.

3. Add grated lemongrass (white part only) into the pot.

4. Tear Kaffir Lime leaves into small pieces by hand (discard the stems ), then add them into the pot.

5. Mix them together by using a whisk.

6. Add pan-fried firm tofu, large diced zucchini, baby corn, and Bamboo shoots into the pot.

7. Lid on, turn the heat on medium-low, let it gently simmer for 30 minutes.

8. After 30 minutes, it’s ready. Dish up, garnish with sliced lime leaves, lime wedges, Thai Basil or sliced green chili (optional) then serve with cooked Jasmine rice or coconut rice.

How to Serve

Usually, we garnish Thai green curry with thinly sliced Kaffir lime leaves, lime wedges, Thai Basil, or sliced green chili( optional) then serve with cooked Jasmine rice or coconut rice.
