  • 3 tbsp/45ml coconut oil, melted (or vegan butter)
  • 2 tablespoons /25g granulated sugar (or cane sugar)
  • 2 ¼ tsp/7g active dry yeast
  • 1 ½ tsp/9g coarse salt
  • 2 tbsp/18g toasted sesame seeds

2. Add the activated yeast mixture to the bread flour, and stir to combine everything until a sticky dough forms.

3. Turn out the dough on a lightly floured work surface. Knead the dough for 8-10 minutes until smooth and soft, but still a bit sticky. 

4. Shape the dough into a ball place the dough ball in an oiled bowl and cover it with plastic wrap or a damp and clean kitchen towel.

Allow to rise in a warm place until the dough has doubled, about 1 hour depending on the ambient temperature.

5. Turn the dough out onto a floured surface and divide the dough into 10 even pieces of dough balls. 

6. Tuck the edges into the center, and roll each piece into a ball. Repeat with the remaining dough.

7. Then place them on a parchment-lined baking sheet and cover with a kitchen towel. Let them rise again until they double in size.

Second proofing time usually takes about 30-40 minutes. During the second rise, preheat the oven to 400°F/200 C.

8. Once the dough is risen, brush each roll with almond milk. Sprinkle or gently pat on the sesame seeds. 

Bake for 18-22 minutes, until well browned on top and firm all down the sides. Don’t be fooled by quick browning on top, the milk makes this happen faster. Also, check the sides.

Remove them from the oven transfer them to a cooling rack and let them cool completely.

  1. I chose this recipe because it said ‘total time 50 minutes’ which, after I’ve mixed the dough, I see is not true. Please post the actual total time with proofing!
