Ingredients For Vegan Cinnamon Rolls

Dough:

  • 1 tsp/3g instant yeast (yeast makes the dough rise)
  • 2 tbsp/8g light brown sugar
  • 3 tbsp/45ml coconut oil
  • ½ cup/120ml oat milk, slightly warm*
  • 1 ½ cup/180g all-purpose flour
  • ¼ tsp/2g coarse salt

Filling:

  • 1 tbsp/15ml coconut oil 
  • 1 tbsp/6g ground cinnamon
  • 1/3 cup/70g packed light brown sugar 

Pan Sauce (Glaze):

  • 2 tbsp/30ml coconut oil
  • 2 tbsp/30ml oat milk
  • 1/3 cup/70g packed light brown sugar

How To Make Vegan Cinnamon Rolls

To Make The Dough:

  1. To make this recipe, get a large bowl and combine the brown sugar, oat milk, and yeast. Stir until the sugar is dissolved.
  2. Add the flour and mix until you start to make the dough form.
  3. Add the oil to the flour and yeast mixture and mix it to completely form a soft dough. Lightly sprinkle flour on a clean flat surface and knead for 5 to 7 minutes. until the dough becomes smooth and stretchy.
  4. Form the completed dough into a ball then place it in an oiled bowl and cover with plastic wrap or a damp towel. Set in a warm place and let the dough rise until it doubles in size, this may take about 1 hour.

Prepare The Pan Glaze:

  1. Grease an 8” x 8”/20cm x 20cm baking pan and set aside. In a small saucepan, combine coconut oil, oat milk, and brown sugar over medium heat.
  2. Cook and stir until all of the sugar is dissolved and the mixture becomes thick, syrupy, and bubbling. Cook for 15 more seconds before removing from heat. Pour into the base of the baking pan and swirl it around the pan to spread evenly.

To Make The Rolls:

  1. In a small bowl, combine the sugar and cinnamon. Stir until evenly distributed. Set aside.
  2. Turn out the risen dough onto a lightly floured surface. Roll into a rectangle about the size of a piece of printer paper, about ½”/12mm thick.
  3. Brush the surface with 1 tablespoon or 15ml of melted coconut oil. Sprinkle the spiced sugar into an even layer over the surface, getting all the way to the edges. 
  4. Starting on the short side, roll the dough up gently but tightly. Turn the dough so the seam is underneath.

  1. Cut the dough into 9 even segments (about 1”/2.5cm wide) with a very sharp knife. Place the rolls in the prepared baking dish so that they are evenly spaced.
  2. Cover with plastic wrap or a damp cloth. Set in a warm place to rise again and allow the rolls to double in size (about 30 to 45 minutes). During the last rise, preheat the oven to 350°F/175 C.
  3. Once risen, remove the plastic and bake the cinnamon rolls for 22 to 25 minutes until just starting to go golden on top.
  4. Remove from the oven and cool for 15 to 20 minutes before serving.

Notes

  • *Oat milk should be warm (115°F/45 C) for best results. You can also use unsweetened nut milk, including coconut milk, to replace the oat milk in both instances in this recipe. Rice milk will not work as well. Soy milk is untested.
  • Rising time will vary depending on how warm the ambient temperature is. Warmer dough will rise faster.

Before allowing the second rise to happen, cover the pan tightly and place it in the fridge overnight.
