Vegan Curried Fried rice is one of my favorite easy weeknight one-pan meals, and it’s also the best way to use up any leftover rice and veggies in the fridge.

Curried Fried Rice without soy sauce

This Vegan curried fried rice– One work in under 15 minutes!” is packed with flavor and so appetizing, also super easy to make. (It’s probably quicker to make your own than waiting for food delivery!)

This fried rice is totally customizable – just add what you want. Pick the curry powder( spicy or mild) and vegetables you like. Make it your own favorite version!

What rice for fried rice?

For stir-fried rice, to achieve the best result, you need at least a day-old cold rice. Because the rice dries out in the fridge and becomes crumbly which is what you need your fried rice isn’t wet or mushy to better absorb the flavors from the spices or sauces.

Also, easier to get that lightly charred flavor during stir-frying.

But don’t worry, if you don’t have leftover rice, you can cook fresh rice, spread it evenly on a tray, and leave it in the fridge until it’s cold and dry. Freshly cooked rice also works well.

I’m also a tofu-lover, especially scrambled firm tofu. Because it mimics the scrambled egg you’d find in conventional fried rice.

When you add curry powder to your fried rice, you will get a beautiful yellowish color that makes your tofu look exactly like scrambled eggs.

The ingredients for this recipe are the simplest you would get, not anything fancy and it’s totally up to you!

  • Cooked Rice– that’s been refrigerated. Rice needs to be cold before you cook.
  • Firm Tofu – Firm tofu or extra firm tofu both are ok. Pat dry with paper towels then rub tofu into crumbles.
  • Onion, Carrot, Green Bean, Spring Onion– Fresh or frozen both are ok. If you use frozen veggies, you need to defrost them and let them air dry a bit.
  • Curry Powder– Pick a brand you like, spicy or mild is totally your choice!
  • Salt: to taste
  • Spring Onion( Shallot) and Fried Shallot– for garnish!

How to Make Curried Tofu Fried Rice

Firstly, we turn firm tofu into tofu crumbles. Then we chop onion, carrot, green bean, and spring onion into small dice.

The stir-frying process is all about quick, so you need to make sure all the ingredients are ready to cook before turning on the gas.

  1. Heat up cooking oil in the wok on medium-high heat, add onion, carrot, green bean, and tofu, and saute until veggies are softened and tofu is slightly golden brown.
  2. Add cooked cold rice into the wok, stirring constantly until rice is heated up.
  3. Add curry powder, stir, and mix with rice till fully coated.
  4. Add spring onion, then quickly stir for a minute, then ready to serve!

Ingredients

  • 3 Tbsp Cooking Oil (Note1)
  • 150 g Firm Tofu
  • 50 g Onion
  • 70 g Carrot
  • 50 g Green Bean
  • 40 g Spring Onion
  • 700 g Cold Cooked Rice (Note2)
  • 4 tsp Curry Powder (Note3)
  • 3/4 tsp Salt

Instructions

Note1: for stir-frying, you need oil with a high smoking point such as Vegetable oil, peanut oil, soybean oil…etc.
