This easy Vegan Fajitas Recipe is a lifesaver for busy weeknights! Shredded meaty king trumpet mushrooms, pan-fried with tri-color bell peppers along with your favorite Mexican spices, topped with avocados, cilantro, and toasted tortillas.
Vegan Fajitas
These one-pan vegan mushroom fajitas are not just flavorful. You can stuff the toasted tortillas with loads of mushrooms, onion, and veggies.
Serve with sliced avocados and fresh cilantro( coriander), a quick drizzle of vegan sour cream, cilantro sauce, or vegan Greek yogurt, and squeeze some fresh lime juice…every bite is so finger-licking good!
This Vegan Fajita recipe is inspired by a Mexican takeout place near where I live; as always, you’re welcome to customize the ingredients to your liking.
Add different vegetables such as zucchinis, cauliflowers(florets only, cut into very small pieces), or even cooked chickpeas and beans. What are Fajitas?
Fajita is a Tex-Mex, Texan-Mexican American, or Tejano (the word “faja” is Spanish for “strip”, or “belt”) Although fajita was originally referred to as strips of meat, now fajitas are made with a variety of fillings, such as green/red/yellow bell peppers, onions, chilies, and jalapeño peppers.
In Tex-Mex restaurants, Fajita fillings are usually made with protein, onions, and bell peppers. Served with condiments suck as avocado (guacamole,) Pico de gallo, salsa, lettuce, limes, and sour cream.
My Vegan Fajitas Recipe
The best part about this tasty vegan fajitas recipe is that it’s basically throwing a mix of vegetables and spice seasonings into one pan! It’s so easy and it’s customizable, you can add vegetables you like (some people like zucchinis and cauliflowers).
The recipe I share with you it’s my own version (you can make your own!) Let’s have a look at what we’ll need for this recipe!
- King Trumpet Mushrooms – Most types of mushrooms will work well with this recipe, including oyster mushrooms, bottom, cup mushrooms, Portabella, Swiss brown…etc. (except dried mushrooms, Enoki…as we’re looking for “meaty” type of mushrooms). - Red Onion and Tro-color Bell Peppers (Capsicums) – Onions and Bell Peppers are the most common ingredients for Fajitas. You can use yellow, white onions or like me, red onions. If you don’t like bell peppers or can’t have them, you can use chickpeas, cauliflower florets, zucchinis…they all go pretty well with fajitas.
- Flour Tortillas – Fajitas are usually served on flour or corn tortillas. You can also use chickpeas flour, almond flour, black bean flour tortillas…it’s up to you!
Vegan Fajita Seasoning
- Dried Spices– Here I use Garlic powder, Ground cumin, Dried Oregano, Ground Black Pepper, and Pink Salt.
- Vegan BBQ Sauce– BBQ sauce is not usually used in traditional fajitas. This is just my own interpretation of fajitas, as I like fajitas a little bit saucy…
- Lemon or Lime Juice– You can squeeze fresh lemon or lime juice, or just use bottled ones.
- Maple Syrup– gives this dish a little mellow taste. You can also use 1 tsp organic sugar instead.
Ingredients for Toppings?
- Avocado– Traditionally fajitas are served with Guacamole, here we just simply use sliced avocado.
- Vegan Sour Cream or Vegan Greek Yogurt– They’re optional.
- Lime wedges
How to Make Vegan Fajitas (Visual Aid)
- The reason why we’re gonna use a fork to shred king oyster mushrooms is to make pulled meat-like texture. If you use other types of mushrooms ( like oyster mushrooms), you can simply tear them into strips or slice them up. ( bottom or cup mushrooms…etc)
1️⃣ Prepare the king trumpet mushrooms first: Fork down the length of each mushroom to shred it, breaking up the head with your fingers, if needed. Slice red onion and tri-color bell peppers into strips.
2️⃣ Heat up cooking oil in a large saute pan over medium-high heat, add the sliced red onion and cook until softened. Then add shredded King Trumpet mushrooms in, saute for 1-2 minutes. Now add sliced Tri-color bell pepper, cook for a further 2-3 minutes.
3️⃣ Add dried spices( garlic powder, ground cumin, dried oregano, ground black pepper, and salt) and vegan BBQ sauce, maple syrup, and lemon juice. Stirring frequently, until all the ingredients are coated with the seasonings then off the heat and set aside.
4️⃣ Heat up another clean saute pan on medium-high heat without cooking oil. Lightly toasted each tortilla on both sides. (Or you can toast your tortillas before cooking the filling so that you don’t have to wash one more pan! )
Then scoop the mushroom mixture onto the tortillas, finished with sliced avocados, fresh cilantro, and vegan sour cream (optional), and serve warm!

- 15 oz King Trumpet Mushrooms( 400g) shredded by a fork (Note1)
- ½ ea Red Onion sliced
- 3 oz Red Bell Pepper (80g) cut into strips
- 3 oz Yellow Bell Pepper(80g) cut into strips
- 3 oz Green Bell Pepper (80g) cut into strips
Seasonings& Sauces
- 2 tsp Garlic Powder
- 2 tsp Ground Cumin
- 2 tsp Dried Oregano
- 1 Tbsp Maple Syrup
- 2 Tbsp Vegan BBQ Sauce
- 2 Tbsp Lemon Juice
- ½ tsp Salt
- ¼ tsp Ground Black Pepper

- 1 ea Avocado Peeled and sliced
- 1 bunch Fresh Cilantro( Coriander) (Optional)
