This recipe has wholesome and simple ingredients which I really appreciate. Not only do the crispy fritters taste good they are healthy as well.

I make this dish as a snack, side dish, or appetizer when I have guests over. The zucchini really shines in this recipe.

And just like in the Tiktok video, you can serve this with a vegan tzatziki sauce, vegan sour cream, or spicy cilantro sauce (The printable recipe card is down below at the end of the post).

  • 3 pc zucchini 
  • 2/3 cups chickpea flour 
  • 1 small red onion
  • 1 cup broccoli florets
  • 1/4 cup parsley
  • 2 tbsp olive oil 
  • 2 tbsp ground flaxseed 
  • 4 tbsp water 
  • 1/2 tsp salt 
  • 1/4 tsp black pepper

Instructions To Make Vegan Zucchini Fritters

  1. To make the recipe, preheat the oven to 350 degrees F. Grate the zucchini and use your hands to squeeze out as much liquid from the zucchini. Grate the broccoli and onion as well. In a large mixing bowl, place the squeezed zucchini along with the broccoli and onions inside. Toss to combine everything. Set aside and discard the water from the zucchini.
  2. In a separate bowl, combine water and ground flaxseed.
  3. Add the ground flaxseed mixture to the shredded zucchini mixture. Add flour, parsley, olive oil, salt, and pepper and mix thoroughly.
  4. Shape the grated zucchini mixture into the desired patty size with at least 1/2 inch thickness and place the fritters on a baking sheet lined with parchment paper.

  1. Place them in the oven and bake for 15 to 20 minutes until golden brown and crispy on the outside. Place the cooked fritters on a large serving plate and serve with vegan sour cream and sprinkle some chopped parsley. Enjoy!

If you do not squeeze the zucchini and don’t get rid of the liquid, your fritters will just steam and won’t get that signature crispy texture.

You will also end up just steaming and boiling your fritters instead of properly frying them.

To make sure that the zucchini is free from any excess liquid, after you grate them add 2 tablespoons of salt and let it sit for 10 minutes, Then squeeze them to extract the zucchini juice. Then fry them up in hot oil or bake them in a preheated oven.

Make sure that you are cooking in a preheated oven or heat up the pan and oil properly before frying.
