– 2 tbsp cooking oil – 7 oz store-bought vegan crispy noodles 210g – ½ large yellow onion sliced – 7 oz firm tofu 200g, diced – 2 bunch baby Bo Choy – 3 cup green cabbage roughly chopped – ½ ea red bell pepper sliced – ½ ea green bell pepper sliced

Stir Fry Sauce – 1½ cup vegetable stock – 1 cup water – 2 tbsp light soy sauce – 1 tbsp vegan oyster sauce – 1 tbsp hoisin sauce – 2 tbsp minced garlic – 3 tbsp cornstarch – ¼ tsp ground black pepper Garnish – 1 cup bean sprouts – 2 sprig cilantro

Add veggie stock, water, light soy sauce, vegan oyster sauce, hoisin sauce, minced garlic, corn starch, and ground black pepper to a mixing bowl.

Heat the oil in a large wok or a large pan on high heat. When the oil is hot, pan fry the diced tofu.

 Remove the tofu once crispy golden and set aside.

 If you use an air fryer to heat crispy noodle nests, reheat them at 212°F/100°C for 10 minutes. If you use a microwave, you can heat the noodles for 30 seconds when your stir fry is ready.

 On medium heat, add a bit of oil to the wok, add yellow onion, cabbage, red and green bell peppers, and fry until until slightly charred.

Quick stir the stir fry sauce mixture to ensure no corn starch settles at the bottom and add it to the work.

Add the Bok Choy and tofu back to the wok, cook until the sauce thickens, taste to see if more salt and pepper needed.
