Wash and peel the potatoes. Place them in a steamer, cook for 25-30 minutes (a knife can be inserted through easily, fully cooked but not mushy). Leave them in the refrigerator and let them cool overnight. You must let them completely cool overnight (or at least 6 hours) so they won’t become mushy when grated. If you try to grate them at this point, you will get mashed potatoes instead).

Grab a large mixing bowl. Use a grater or food processor to shred the potatoes.

Add all the seasonings (onion powder, garlic powder, mixed herbs, salt, and pepper), oil, and cornstarch to the potatoes, and gently combine using a spatula.

Place a piece of parchment paper on a plate. Make hash browns with a large cookie cutter (1 potato = 1 large hash brown). Press a little bit until they form patties.

Preheat the air fryer to 190 C| 375 F. Gently place the hash brown patties in the air fryer and make sure they are not overlapping each other. Air fry for 15 minutes.

Once golden brown, flip to another side and cook for a further 5-10 minutes until golden crispy (the cooking time may vary, you can adjust the time by using your own judgement). Serve when hot, enjoy!

Air Fryer Hash Browns are a healthier alternative to the greasy, deep-fried restaurant version. When you cook hash browns in air fryer, you can enjoy all the flavor without all the guilt. Since this recipe is made from scratch, your hash browns are free of any unwanted additives.
