Wash and peel the potatoes. Place them in a steamer, cook for 25-30 minutes (a knife can be inserted through easily, fully cooked but not mushy). Leave them in the refrigerator and let them cool overnight. You must let them completely cool overnight (or at least 6 hours) so they won’t become mushy when grated. If you try to grate them at this point, you will get mashed potatoes instead).
 Preheat the air fryer to 190 C| 375 F. Gently place the hash brown patties in the air fryer and make sure they are not overlapping each other. Air fry for 15 minutes.
 Once golden brown, flip to another side and cook for a further 5-10 minutes until golden crispy (the cooking time may vary, you can adjust the time by using your own judgement). Serve when hot, enjoy!
