Ingredients – ▢ 2 tbsp olive oil – ▢ 1 large white onion 8 oz, sliced – ▢ 3-5 pc chipotle pepper in adobo sauce 3 for mild, 5 for slightly spicy) – ▢ 2 tbsp chipotle sauce – ▢ 7 oz fire-roasted tomatoescanned or homemade – ▢ ¼ cup tomato paste – ▢ 2 tbsp minced garlic or 5 large cloves, finely chopped – ▢ ¼ cup vegetable broth Spices – ▢ ½ tsp all spice – ▢ 1 tsp ground coriander – ▢ 1 tsp ground cumin – ▢ 1 tsp paprika – ▢ 1 tsp garlic powder – ▢ 1 tsp dried oregano – ▢ 2 tsp unsweetened cocoa powder – ▢ 1 tsp salt – ▢ 2 tbsp coconut sugar
Sauté the onion until soft and transparent without color. Once the onion is softened, add remaining ingredients into the pot
Bring it to simmer. Once it’s bubbling, turn off the heat and let it set aside too cool.
Pureeing it into a paste by using an immersion blender or a food processor until the mixture is smooth and blended.
